dont judge a sandwich by its cover

This is a recipe for a SPICY SOURCREAM & ONION CHICKEN open faced sandwich . Not all recipes are Rachel Ray pretty but i can tell you this sandwich is a huge hit at my house and for something that takes me less than 20mins to prepare and serve , it will remain in my mommy made recipe log pretty or not  =) ! So if this is a recipe you choose to try like all recipes we post on this site i hope you will leave your familys feed back be it good or bad we would all love to know !                                                                                                                                                                                              

WHAT YOU WILL NEED :
1 bag boneless skinless chicken breast (though in a pinch ive used canned)
2 med onions(chopped)
2 or 3 cans of mushrooms (depending on your family)
1 16oz sourcream (lite if you want)
1/2 stick of margarine
1 cup ranch dressing
1 packet ranch powder
parsley & paprika (to taste)
1 cup of your favorite hot sauce (we use tiger sauce)
1 loaf of bread (2 slices per person ) (texas toast when available)
instant mashed potaotos (prepare according to box directions)
serves about 8 guests

DIRECTIONS :
  1. Cook the chicken breast and chopped onion  in a small amount of water in your favorite skillet , once the chicken is fully cooked you can add in your mushrooms . Turn the heat to low for a few minutes and in a seperate sauce pan mix in your remaining ingredients (with the exception of the bread and mashed potatos ) heat slowly on no more than a medium heat stirring regularly , once the butter has completely melted u can drain off the remianing water from your chicken skillet and mix the two pans together into the sauce pan . Continue to keep heating while you toast your bread , toast two slices per person . While your toasting your bread , start making your instant mashed potatos (just follow the directions on the box make as many servings as you will be feeding ) then its time to build your sandwich . Start with a slice of toast , then spread a small to medium amount of potatos on that slice (dont over do it ) top with the second piece of bread , then use a slotted spoon to top the meat sauce on to the sandwich , we just add the liquid sauce as desired ! I hope your family enjoys this hearty homemade meal and it can become a family favorite at your house as well !!!!
